  • 1 head of Romaine lettuce
  • 1/2 red onion, thinly sliced
  • 1/2 cup roasted chickpeas
  • 1/4 cup vegetarian parmesan
  • 1/4 cup Greek yogurt
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Lemon juice, salt & pepper

How to Prepare

  1. Prep the Base: Rinse the fresh romaine and chop it into bite-sized pieces before placing them in a large mixing bowl.
